Hopped on a plane Friday and when we landed, there were a deluge of emails about the uncanny hotness of Wayne Ellington’s 19-year-old busty girlfriend. He’s going to Minnesota; she’ll remain a Drexel undergrad who will likely spend the summer sifting through a slew of offers from the likes of Maxim, Playboy, and whatever magazines are left in that genre. Has there ever been a “Girls from the CAA” feature, anywhere?
Her name’s Amanda Altschuler, and one night at a draft party has done wonders for her fame on the internet. Yes, she has some experience modeling. And yes, the next time we’re drafting NBA wags, we can only hope the two are still together, because she’s top five material. Easily.
The good news? He’ll be taking the SG spot in Minnesota from an underwhelming Tar Heel – Rashad McCants, who was dealt to Sacramento earlier this year.
This is a turtle week in sports. Everyone’s counting down the hours until the 3-day weekend, stockpiling fireworks, and wishing John Feinstein the best of luck following this morning’s emergency bypass surgery.

The other sad part is that he’s got 2 years left on his deal, but the second one isn’t even fully guaranteed, so he can’t trick anybody into paying him.

and charcoal is great if you have a half hour to grill some shit, but a gas is much more convenient. of course charcoal tastes better, but you can make some damn fine shit on a gas grill.

Amen to the Weber kettle. I have a gas grill that draws dust and dirt on the deck while the Weber gets used at least twice a week.

Also, back when I had a gas grill, the starter never worked. Just turn on the gas and drop a match in there. Stand back and have that match ready when you turn it on. If you wait to light until after you turn on the gas, you are doomed to a poof! and burnt eyebrows.

Billy – Yep, I’ve used that same exact one many times. It’s essentially the same as the one I linked, except for a few bells and whistles. Nothing beats getting up at 6 am on a Saturday, firing up about 13 pounds of pork shoulder on the smoker, and breaking out the Weber kettle to cook burgers for lunch, and then steaks for dinner. Then about 11 pm, that pig’s ass is about ready to come off. We always do that a week ahead for our pre-Thanksgiving college buddies get together.

I think so. A lot of newer grills have the little boxes that you can put wood chips into. One can rig up something similar for older grills. Do a search on “Frank and smoking”. I subscribe to a smoking enewsletter. Can’t remember his last name.

I’ve done this, but it’s labor intensive. Pile your charcoal on one side, and put a pot of water on the grate directly over it. Place your meat on the other side. You’ve got to make sure you moderate the heat just right, or you can overcook your meat really easily.

I’ve always found those burners useful if you are doing wings or something that you need to sauce in between grilling and then throw them back on.
TBL- I can understand the ease of using propane but I don’t really mind the wait for Charcoal. Thats what beer is for.
Also anyone using Charcoal I highly recommend this handy product
Charcoal lights much faster with that and you don’t need lighter fluid so you avoid that in your food.

YYSA – The chimney is clutch. Best investment you can make for a charcoal grill.
Sir – It really depends on how often you plan on smoking something. I’d say if you plan on doing it more than twice in a year, this is the way to go. The true smoker will give you more even cooking, and it’s a lot less work.

I’ve never done it, so I don’t know. Just try it out. Try something simple first that doesn’t take too long to smoke. Salmon and beer-butt chicken are pretty hard to screw up. And with salmon, always use the cedar plank. If you try it out, let me know how it works out.

sir- depends on which size you get— i think 600-1200+. we got the large which was about 1000…it can hold about 5 racks of ribs, we also did a thanksgiving turkey on it, and have smoked some pork shoulders on it.

i have a question on grilling for all you grill in experts. is the secret to cooking steaks low/medium heat for a long time or high heat for a little time? i like my steaks medium with a little pink. mind you i dont have a real grill i have a foreman grill that is built to look like a real grill. i usually buy thick cut ny strip steaks

High heat for a short time dries it out, low/medium heat for longer will let it keep more of the moisture in, keep in more taste.

Truer words have never been spoken. When I went to Talladega last year, we were going to have steaks for dinner after the race. The guy who did most of the cooking announced “If anybody has a problem eating medium rare steaks, let me know, and we’ll throw yours on the grill before we go to the race”.

There are two fields of thought.
1) Searing the steaks (high heat, short time) seals in the flavor and the moisture.
2) Searing is a load of shit, and actually dries out the steak.
In reality it’s a bit of both. While searing does actually dry the steak out more it creates two different tastes through carmelizing the outside of it. Having a bit of a crunch on the outside accentuates the taste of the inside. Personally I’m a fan of cooking it slower over low heat though.

mrejr- high heat, short time. you only want to turn it once or twice…medium rare is usually 4 mins per side, so maybe 5 or 6 per side for medium.

mrejr, if you don’t have a grill, you can use the boiler. its like an upside down grill. get a grill pan, and put that in there to heat up while you start the broiler. after a few minutes, you can go like 2 minutes on each side. works pretty well, imho

There’s a stove store I always go to to ogle Big Green Eggs. They’re so awesome, and there’s just nothing more efficient for smoking, especially small batches. One of my neighbors has one, and you can’t even get a word in edgewise with how many times that bastard says “big green egg.”

Depends on your setup, and how hot you can get your grill. If you can get it hot enough, you can sear it, and lock in the moisture. Then again, I prefer my steaks this way, and some people don’t.

thats how i have been doin it and my steaks have been juicy as fuck. every one has told me medium heat for a longer time but i have never been disappointed with how my steaks turn out.
i am going to try that when i have a few extra dollars to buy a few steaks so if i mess up i can just use my foreman grill on the other steaks. thanks for your input everyone.

I’m a high heat/searing guy. The key to a good steak, more than anything else is rest. I only turn them once. I try not to look at them, because if I look at them, i get worried, and I end up with a steak Spencer wouldn’t eat.
I’m cooking on a 5 summers old Vermont Castings. Nothing on this thing has broken, and I’m throwing down a lot of grilled food.

billy, a few weekends ago we did a great brats recipe. sounds a little crazy, but split the brats open and stuff them with pitted cherries. then, wrap em in bacon and grill away. the sweetness from the cherries and the salty bacon is just awesome.

Over here, we use Dijon Mustard and a prune, then a bacon wrap, but not on a brat. On a fine sausage you get from a butcher. That’s my signature grilled appetizer.

This is definitely required. I like to then take a ladle or two of that cooked bear and let it cook down in a pan with some onions and green peppers.

I also like to do this. Put a nice layer of fresh sauerkraut down then the brats on top and then pour a 24 oz beer in and just let the beer simmer out indirectly on the grill.

Sir – Maker’s and ginger is a staple when at the bar, but around the house, any number of small batch bourbons are in the rotation. I don’t particularly care for Knob Creek, but Booker’s, Baker’s, and Woodford Reserve are solid. If I’m just getting hammered, though, Jack Daniel’s is the go to.

That’s how our track/XC coach was when I was in high school. That’s how he won 5 state titles in 6 years. I was never very good (about middle of the pack on a XC team with about 100 kids), but he wouldn’t bullshit us, and he’d work with anyone who was willing to put in the effort.

Ahhh, the feared back injury. Anything core-related can be so absurdly destructive to a running career. After I got the boot from the KU team (even just a year or two ago, I was too stupid to know when to not be a smartass), I took almost two years off, coming back now still blows. I’m getting there, but I have the same issue. I can remember going cruising for like 10+ daily, and even though I’m almost there again, it was pretty depressing to struggle to run a 5K under 20:00 when I was so much faster not that long ago.

Nice. See our house in Charlotte is two miles from the NC/SC border. NC liquor stores (ABC stores) are state run and all have the same prices, so there is no competition and naturally, higher prices. SC however allows their liquor stores to be privately run, so there is price competition. There is a store right on the border, SC side, near where I live and stuff there is usually three or four bucks cheaper than in NC.
Plus it’s an extra buck cheaper if you pay with cash.

Same, younglefty. I worship my HS coach, and he’s won something like 40+ state titles. He’s brutally honest, but uses positive reinforcement. If you’re willing to put in the effort, he’ll take the time with everybody.

I shot poorly on the front with a 48 but had an amazing back nine. Hit a 5 iron 187 (GPS on the carts) and jarred it on a par 4 for an eagle. First ever in my golf career. Ended up shooting a 40 on the back nine to finish with an 88.

6.2 miles. Sir Spicious, you don’t have to try very hard to big time me. Like I said, I was about middle of the pack on our team (low 19s in the 5k by my senior year). I figured out that I was much better at the 800m and better suited to the track, and used XC season to stay in shape, but that meant I still had another 10 guys or so who were waaaayyy faster than I was.

I agree 100% Sir. I think a lot of the national rankings have to do with the mindset of “Well, it’s a team from Georgia (or any of the other states you mentioned), so they must be really good.” We only had a handful of kids that went on to play at major D1 programs, but our high school was a recruiting farm for Presbyterian College, and a couple of guys went to Furman. Jason Elam is an alumnus, though, and that’s why I always draft him for my fantasy team.

They won the AAAA state title my sophomore year, the first ever for a Gwinnett County Public School, and were ranked higher the next few years, but won no titles. Next thing you know, Jeff Francoeur comes along at our main rival about 8 miles away, and his school gets profiled in SI and on ESPN.

Frenchy was a legitimate two sport stud in high school, and they won everything. He wanted to play at GT, but the football coach wouldn’t allow him to play both football and baseball, so he settled on Clemson. It was a moot point after the Braves drafted him, and gave him over a million for a signing bonus. McCann was the same age, but his high school sucked at everything, so not so much hype around him.
